Cheezy Cauliflower Casserole

This weeks ‘cheezy’ cauliflower casserole recipe actually doesn’t contain any cheese at all but definitely still has the warm comforting effect of a traditional mac n’ cheese casserole. It contains a few simple whole food ingredients and is super easy to whip up. I served this at my family’s thanksgiving meal and it was a hit-even the non-cauliflower lovers devoured it.

I’ve probably mentioned before the importance of the cruciferous vegetable family which includes brocolli, cauliflower, cabbage, kale, brussels sprouts, and bok choy. These veggies not only contain fiber, vitamins, and minerals but one of the phytochemicals found in cruciferous veggies-sulforaphane- can help the body detoxify carcinogens and prevent the growth of cancer. I recommend eating vegetables from this family on a daily basis and this recipe will make that much easier for you!

Cheezy Cauliflower Casserole

Ingredients:

  • 1 large head organic cauliflower, broken down into florets
  • 1/2 cup raw chashews
  • 2/3 cup unsweetened cashew milk
  • 1/4 cup nutritional yeast
  • 1 tsp paprika
  • 1/4 tsp each sea salt, black pepper, ground tumeric
  • 1 Tbsp dijon mustard
  • 3 green onions, chopped
  • 3 pieces organic nitrate free bacon, cooked and crumbled

Method:

  • Preheat oven to 375
  • Line a baking sheet with parchment paper and lay bacon flat on sheet and bake in oven for about 15 minutes (bacon should be mostly cooked but not crispy as it will go back in the oven later)
  • Steam cauliflower florets until tender (about 10 minutes)
  • In a blender combine chashews, cashew milk, mustard, nutritional yeast, and spices until smooth
  • Place cauliflower and cashew sauce in large casserole dish and stir so that all of the cauliflower is covered in sauce
  • Garnish with green onions and crumbled bacon and place back in oven to heat through for 10-15 minutes just before serving
