Strawberry ‘Nice’ Cream

Warm summer weather is finally here in Vancouver and this tasty frozen summer treat couldn’t be easier to make. It has only 2 ingredients and takes about 2 minutes to prepare. Not to mention it is much healthier than traditional ice cream treats and a great option for those following a dairy free diet.

Recipe (Makes 1 Serving)

1 ripe banana, cut into small chunks and frozen

1 handful frozen strawberries


Blend frozen fruit in a small food processor until smooth. Serve immediately or transfer into a glass container and store in the freezer. If you eat it right away it will have the texture of soft serve ice cream. If you like your ice cream a little firmer you can put it in the freezer for a couple hours to harden it up, just take it out 10 minutes before you want to eat it so it will be scoopable.

For extra sweetness you can add 1 tbsp of raw honey or maple syrup before mixing.
